used the hotkey +x combo, and increased the resolution, and after a restart the picture quality was soo much better. Great advice, thanks!
Now I have to ask, is there other settings I can change to further increase quality? I have 4k tv also urging 16:9 format 
What is your ultimate goal? You can play in 16:9, but aspect ratio changes as you just end up stretching the graphics.
You could keep going, but remember with the limited hardware as you increase image quality you degrade performance, and for emulation with our hardware, performance should be priority over image quality.
Emulationstation is just a prettier front-end that launches Retroarch + other emulators.
What wiki? what script? if you are talking about the reicast-joyconfig script you need to copy the output to a file in /storage/.config/reicast/mappings then change evdev_device_id_1 = x x being your evdev device (you should know it from running the script) in emu.cfg
I can confirm that the included dosbox is very slow, but I changed to to a new version that seems to run well, but it needs a few libraries that I need to find a way to include, I will release a new test version with this new core ASAP.

Are you using the N2 ? if so then Amiberry seems to not work on the N2, I opened an issue on GH but so far no luck on getting it fixed

Well without knowing what you already tried its going to be hard to explain.
You need to put the Kickstart files in /storage/roms/bios/kickstarts
roms in /storage/roms/amiga

That is a known issue. Its a problem with the ES version I am using and the recent changes to CE sound.
